Interpretive cuisine dazzles guests

As you walk through the Bellagio’s Conservatory and Botanical Garden, displaying the Summer Garden Party exhibit vibrant colors will flash before your eyes and your nose will fill with sweet, tangy smells.

After strolling through the beautifully structured and arranged garden, stop by OLiVES, located directly to the left of the Bellagio’s valet entrance and past the Armani store, for a deliciously unforgettable lunch.

At this high-end, interpretive Mediterranean restaurant, many delectable starters are offered to kick off your lunch. OLiVES’ chef selects prime meats, cheeses, and accompaniments daily for the charcuterie board. Cheeses like fontina and blue, Italian deli meats like sopressata and pancetta, toasted ciabatta, pickles, and candied dates are displayed on a personal-sized antique cutting board. This delicate and smoky dish is perfect to be shared by a table and creates an atmosphere for light chatter.

The mouthwatering OLiVES burger, one of the restaurant’s most enjoyed entrées, is aptly named as their signature dish. Seasoned ground beef topped with your choice of white cheddar or truffle cheese and caramelized onions are placed between a soft, grilled bun with tomatoes, pickles, and lettuce set on the side. The gourmet burger comes with thick cut fries completed with grated parmesan cheese. This main course option will be enough to fill you up until breakfast the next morning.

Even if you are stuffed, OLiVES’ desert menu will not allow you to tear your eyes away from the ice cream sandwiches. The dish comes with two sandwiches one crafted with mint chip ice cream and the other with vanilla–both capped with homemade chocolate chip cookies. The warmth and the chill of this desert produces a reason to stuff your stomach to the point of no return.

An afternoon out on The Strip, enjoying the perks of living in Las Vegas, would not be complete without dining at an exquisite, top-rated restaurant.
